It is a typical Italian recipe from the Norcia and Spoleto areas, very tasty, nutritious (lentils are a legume rich in iron and fiber) and simple to prepare.

Wash the lentils three times to remove any earthy deposits. In a saucepan put cold water with salt and pour the lentils. For a bag of lentils (500g) you need 750ml of water. Turn the heat on to medium-low. The cooking time is about 35-40 minutes. If the water dries up quickly, add a little. When they are ready pour them into a bowl, add a generous dose of extra virgin olive oil, pepper, and fresh rosemary. The dish is ready.

1 clove of garlic (optional if you don’t like it)
